Recipe Review: Strawberry Gelatin
Those strawberries we were slicing this morning were for these—light, fresh cups of homemade Jell-O for a quick weeknight dessert. We’re eating as many strawberries as we can right now, and while we really wanted shortcake or maybe a whipped cream fool, this was the more sensible choice after a weekend of burgers and hot dogs.
The recipe is from Martha Stewart’s Everyday Food, and it has just four ingredients: strawberries, lemon juice, sugar, and gelatin. Well, there’s some water in there, too, so five.
One thing we’d pay more attention to next time is the foam. When we stirred the warm gelatin mixture and added it to the strawberry juice, we got a layer of bubbly foam that stayed put when the gelatin solidified. Not a big deal, but we might be more gentle in the future (less energetic whisking) so we get a smoother result.

We followed the recipe and added chopped strawberries on top, but these would be great with whipped cream, too. A little less healthy, but maybe you didn’t eat as many burgers as we did over the weekend…
