Inspired by the hearty spiced muffins of the same name, morning glory overnight oats are a make-ahead breakfast with a sweet taste of what’s to come in the autumn months ahead. Like the muffins, you’ll find a warm blend of cinnamon and ginger plus hearty mix-ins like apple, carrot, raisins, and walnuts.

Store Oatmeal Based on Your Morning Routine

What does your typical breakfast routine look like? This is the question you want to consider before stirring together and stashing your oats in the fridge. If breakfast is an at-home affair, store the oats in a big bowl and then scoop out what you like in the morning. If you need something you can grab as you run out the door, your best bet is to use Mason jars or resealable containers; once the oats and all the goodies are mixed together, portion out breakfast individually, so all you have to do in the morning is reach in the fridge.

Either way, you’re in for a breakfast that’s so much better than that coffee shop muffin.

Morning Glory Overnight Oats

Inspired by the hearty muffins of the same name, tender soaked oats are mixed with apple, carrot, and walnuts for a wholesome, make-ahead breakfast.

Serves4 to 6

Nutritional Info

Ingredients

For the oats:

  • 3 cups

    dairy or non-dairy milk

  • 2 1/2 cups

    rolled oats

  • 1

    red apple, cored and diced

  • 1

    medium carrot, peeled and shredded

  • 1/2 cup

    raisins

  • 1/4 cup

    maple syrup

  • 1 1/2 teaspoons

    ground ginger

  • 1 1/2 teaspoons

    ground cinnamon

  • Pinch salt

For serving:

  • 1/2 cup

    chopped, toasted walnuts

  • 1/2 cup

    unsweetened coconut flakes

Instructions

  1. Place all the oat ingredients in a large bowl and stir to combine. Cover the bowl or divide the oat mixture between Mason jars or resealable containers. Refrigerate overnight.

  2. When ready to serve, stir the oats again. Top with the walnuts and coconut flakes before serving.

Recipe Notes

Storage: Store in an airtight container in the refrigerator for up to 4 days.
