A friend left this recipe on my refrigerator while I was out. They must have known that mangoes are one of the two non-local items I cannot live without (avocados are the other.)

Mango Salsa
serves 4

2 cups plum tomatoes, seeded and diced
1 1/2 cups diced, peeled ripe mango
1/2 cup diced onion
1/2 cup chopped cilantro
2 tablespoons fresh lime juice
1 tablespoon cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, minced
1 jalapeño pepper, stem and seeds removed, minced (optional)

Combine all ingredients in a bowl and serve with grilled fish or chicken. Also great on top of tacos.
