A sushi restaurant in Mount Dora, Florida, known for its innovative, eye-catching creations (think: rainbow mosaic sushi, sushi hot dogs, and sushi burgers) is gracing our Instagram feeds with their latest creation: a rainbow sushi roll.

Rachel Samson of @stickaforkinme shared a video of the rainbow sushi roll in the making at WAVE Asian Bistro & Sushi. The Reel is posted on both Samson and Wave’s Instagram accounts, and it’s fascinating to watch.

First, the sushi chef creates mini sushi rolls containing just rice and cuts them in half to make a semicircle shape. Three semicircles are lined up side by side, topped with a rectangular piece of rice, and topped with three more semicircles to create a cloud shape. Next, the sushi chef creates the rainbow by layering rectangles of rice dyed with food coloring (red, orange, yellow, green, blue, and purple) between sheets of nori. The cloud is added to the side of the rainbow stack, then a long piece of nori surrounds the entire creation. The chef slices the roll to reveal the rainbows, curves them with their hands to mimic the shape of a traditional rainbow, then plates the rainbow sushi and dips it into soy sauce.

“The creativity @wavemountdora ⁣never ends … ” Samson captioned the post. Some commenters are just as mesmerized by the rainbow sushi roll as we are, leaving comments like “So cool,” “Wow,” and “So pretty!! I want it.” Others are quick to point out that the roll is only made with rice and could be improved upon with some veggies or even a protein thrown in. While I probably wouldn’t actually order this roll, the Reel was satisfying to watch and peak Instagram content.
