This Quinoa Cucumber Salad with Feta Takes Lunch to the Next Level

Feta cheese is quickly becoming the linchpin of my healthy-eating meal prep game. A little bit of it adds a ton of flavor, and the moment I sprinkle it over whatever lentils, farro, beans, or barley I found in my pantry, the whole meal suddenly becomes special. A little bit of feta can make otherwise boring foods into something you’re really excited to eat, and if you also have fresh herbs, you can really level up your lunch to something special. 

In this grain salad recipe you take quinoa, rinse it, and then boil it for about 15 minutes. Let it cool to about room temperature. Hot tip: You can also make the quinoa in advance to save time, then you won’t have to wait for it to cool. 

Thinly slice two or three cucumbers and a small bunch of radishes. Chop a small bunch of dill and another of mint, then toss the herbs and sliced vegetables with the quinoa.

Mix up a quick lemon vinaigrette by combining fresh minced garlic with olive oil, lemon juice, vinegar, and salt and pepper. Whisk all the ingredients together, pour the dressing over the quinoa, and toss to combine. This is an extremely versatile dressing you could use for any sort of salad, whether it’s made with grains like this or it’s a big pile of fresh leaves. 

Scatter crumbled feta cheese over the top of the salad, and eat it right away. You could also save it for lunch, but it’s best not to let it sit in the fridge for more than a day or two, because the mint will wilt eventually. If you have olives or cherry tomatoes, or even chickpeas, those would taste great in this salad, too.
