While meal prepping over the weekend is a great way to ensure you have lunches to pack through the week, things don't always go as planned. Sometimes Sunday gets ahead of you and you realize you've got nothing to bring. Don't worry! You won't have to resort to buying lunch all week if you turn to these quick recipes. They require minimal ingredients and can even be pulled together in the morning before you head out the door.
