As it is, a poached egg on toast is a pretty special thing. But Heidi at 101 Cookbooks has an elegant variation that sounds like the perfect quick fall dinner: eggs poached in white wine, served on a piece of avocado toast. Um, yes please.

The wine is simmered with minced shallots and herbs for a flavorful, unexpected poaching liquid that can be used to make a quick sauce after the eggs are done cooking.

Although it’s hard to imagine a better accompaniment than avocado toast, Heidi also suggests serving the eggs with a root vegetable gratin, potato stew or kale salad. We think they’d make nearly any fall meal a little more special.
