Queso Baked Chicken Should Be on Your Menu Tonight

If you ask me, the answer to, “What should we have for dinner tonight?” should always involve heavy cream or cheese. I enjoy a rich, flavorful dinner. That’s why I was very excited to stumble upon this recipe for queso baked chicken from the blogger behind Julia’s Album. There’s heavy cream! There’s cheese! There’s chicken! It also comes together in minutes but looks like it took much longer. Dinner, you’re mine.

To make the recipe, you start by placing chicken breasts in a casserole dish, seasoning them with a number of spices, and then topping the chicken with chopped tomatoes and green chiles.

The ingenious weeknight portion of this recipe comes in with the queso. You don’t have to melt a block of cheese — you can just buy prepared queso at the grocery store instead. Your favorite brand tastes just as good, and takes zero seconds to prepare. Take a cup of sauce from your favorite jar of chili con queso sauce (like Desert Pepper or any brand you prefer on your nachos) and spread it evenly on top of each chicken breast.

After adding your queso, add more green chiles and chopped tomato, and then add even more cheese. Bake for about 30 minutes until the chicken has cooked through. This casserole goes perfect with rice, pasta, or even by itself. To garnish this dish, top with a wee bit more chopped tomato and chopped fresh parsley. Enjoy.
