Put This Creamy Italian Chicken on Tonight’s Menu
Somehow it’s Monday already (RIP, weekend) and you forgot to meal plan again. Don’t despair! I’ve got a delicious recipe for you to make tonight that everyone in your family is sure to love. It does require you to stand at the stovetop, but at least you don’t have to turn on the oven!
With 25 minutes of prep time and 10 minutes of cook time, this creamy chicken and veggie dish is almost a 30-minute meal. In one pan you’ll make a flavorful cream sauce with butter, garlic, chicken broth, heavy cream, and Italian seasoning. In a second pan (sorry, one-pan meal fans!) you’ll sauté the veggies — zucchini, mushroom, and roasted red pepper — and then sear the chicken breast. Once your sauce is thick and creamy, you pour it into the other pan with the veggies and chicken, and add in some fresh basil.
This meal is delicious on its own (served with some crusty bread to soak up the sauce and a simple green salad), but you could also serve it over pasta, rice, or quinoa if you want to bulk it up a bit. And since it’s summer and we’re easing back into the work week, a cold glass of rosé would also be quite welcome here. Cheers!
