This Recipe for Pumpkin Streusel Muffins Will Become Your Morning Go-To All Season Long
October may be over, but pumpkin season is still in full effect. The pumpkin spice lattes are still flowing, but with Thanksgiving near, pumpkin pie is about to have its time in the spotlight. But, admittedly, I’ve never liked pumpkin pie. To me, it’s the unsweet version of sweet potato pie, and my Southern roots won’t accept that.
However, I recently came across a pumpkin pastry that I can definitely get excited about: pumpkin streusel muffins. When I saw foodie and blogger Sarah Fennel’s (@bromabakery) recipe for these sweet, soft, and buttery pumpkin streusel muffins, I knew I had to share it with you.
Beyond the flavor, the best part about this recipe is that it’s quick and convenient. In just 30 minutes, you can have a hot plate of muffins for yourself, your family, or your coworkers. Before we start, it is critical to note that this recipe calls for pumpkin purée, not pumpkin pie mix.
How To Make Broma Bakery’s Pumpkin Streusel Muffins
After preheating the oven to 375°F, line your muffin tin with muffin liners and spray each liner with cooking spray. Then, in a large bowl, mix sugar, vegetable oil, milk, pumpkin purée, eggs, and vanilla extract. Once it is mixed well, add the following dry ingredients to the wet mix: baking powder, baking soda, flour, cinnamon, nutmeg, ginger, salt, and clove. After adding, stir everything until it is thoroughly mixed. Now it’s time to fill the muffin liners with your batter. Scoop enough of the batter to fill each muffin liner so that it is filled 2/3 of the way. Before you bake them, you need to craft your streusel.
This streusel is a simple and sweet way to enhance the muffin. Simply combine flour, pecans, unsalted butter, light brown sugar, salt, and maple syrup in a large bowl. Continue stirring the mix until it begins to look like wet sand. Now, distribute the streusel evenly across the top of each muffin well.
To finish our tasty creation, bake the muffins for 15 to 17 minutes or until a toothpick inserted in the center of the muffin comes out clean. Although the enticing smell of the muffins will make you want to dive right in, be sure to allow them to cool before they are served.
