This Recipe for Pizza Pot Pie Combines Two Nostalgic Classics You Can’t Get Enough Of
There’s nothing like a loaded casserole for dinner on a cold night. A deep dish filled with meats, veggies, and cheeses — whatever your heart desires — and then baked until bubbly and hot? Now that’s the kind of weeknight meal we crave after a busy day.
Chef and content creator Calvin Kang of @cooklikeimbook recently shared a pizza pot pie recipe that fits this bill perfectly. This pizza pot pie recipe is intriguing, in that it feels like a sort of marriage between Chicago-style deep-dish pizza and a homestyle pot pie. The result is a perfectly cheesy union.
Starting with a large mixing bowl, combine flour, fat-free Greek yogurt, and baking powder. Knead it together until it forms a dough, which is then broken into three pieces and flattened out.
Then place your favorite toppings at the bottom of a ramekin (we love the classic look of these from William Sonoma). Toppings can be marinara sauce, mozzarella, pepperoni, or vegetables (such as onions and green peppers). It doesn’t matter what it is — as long as you love it on a pizza, you’re good to go. Once added, take your now-flattened dough from earlier and place it on top of the ramekins. Spray the top with a bit of cooking spray and place in the oven at 350°F for 30 to 35 minutes. Let cool a bit once removed and enjoy!
These pizza pot pies are not only hearty, but also a fun choice for a dinner party because everyone at the table can have their favorite type of pizza ingredients in their individual ramekin. Everything from the sauce to the type of cheese, meat, and veggies can be customized, making it great for guests and family night. Or, as the case may be in my own home, using up those leftover vegetable odds and ends I’ve had on hand since my last grocery forage. Any way you slice it, though, you’re going to love the outcome.
