The Best Pioneer Woman Instant Pot Recipes for Cold Nights
I don’t know about you, but when it gets cold all I want to eat is comfort food: the heartiest meals that make me feel all warmed up and cozy inside. But I also don’t want to spend a ton of time in the kitchen, you know, not wrapped up in my blankets. Luckily Ree Drummond recently shared her favorite Instant Pot recipes, which will satisfy your desire for comfort food that doesn’t take much effort to make.
Drummond took to her blog to adapt her recipe for spicy Dr. Pepper shredded pork for an Instant Pot, and as Today reports, apparently the spicy chipotle peppers perfectly complement the sweet soda. Once the pulled pork is done cooking in the Instant Pot, Drummond promises it tastes great with just about any meal: as a sandwich, on pizza, or even as a topping for nachos, although she prefers to wrap it in tortillas. And here’s another one of her pro tips: Be sure to drench the meat in the juices from the pot to add some extra spice.

Drummond didn’t forget about your sweet tooth, either. She also has an Instant Pot recipe for a chocolate lava cake for all you folks who might feel a little intimidated by traditional baking. These mini cakes, which you cook in ramekins at the bottom of the pot, take about 30 minutes to make and require zero time in the oven. Believe it or not, the Instant Pot can even handle cake.

Spicy pulled pork followed by a personal-sized chocolate cake is the sort of meal I can get behind in any season, but in this chilly weather you want food that will keep your spirits up. Sure, it sounds indulgent, but you should give yourself permission get wrapped up in a blanket, pour yourself a glass of wine, and let the Instant Pot do all the cooking for once.
