The Pioneer Woman Says These Instant Pot Carnitas Are Life-Changing

If you're looking for a change, you don't need to rush out and get bangs. Follow Ree Drummond's lead and make these Instant Pot carnitas instead — they're a much better way to spice up your life, and you won't run the risk of getting stuck with a bad photo on your driver's license.

This weekend the Pioneer Woman introduced a recipe for Instant Pot carnitas cooked in Sprite that she says "will change your life for the better." Now a bunch of her fans say they're trying out Instant Pots for the first time based on her recommendation.

Her carnitas recipe calls for pork shoulder cut into cubes and browned with the Instant Pot's sauté setting. Then the pork is pressure cooked for 25 minutes with onions, peppers, garlic, and spices in a bath of lemon-lime soda and orange juice. Once the pressure is released, the meat comes out so soft and tender you can just tear the pork apart with a pair of forks until it's nice and shredded.

Ree likes to finish the carnitas under the broiler for two to three minutes to crisp it up a bit. She recommends serving it on tortillas with queso, cilantro, and store-bought peach salsa.

The episode aired this past Saturday, and there are already four reviews of Ree's Instant Pot carnitas on the Food Network site. All four rated it five stars, and one even wrote about having gone out and bought a multi-cooker just to make this recipe. (We love the dedication!)

From the looks of Ree's Twitter comments, there are about to be quite a few new Instant Pot owners in the world, too. Several Pioneer Woman fans said that her endorsement was enough to make them finally go through with getting their own Instant Pots.

I think they're going to like their Instant Pots — I sure do — and Ree's carnitas recipe is just the sort of thing that really shows off why they're so great. It would normally take hours to cook carnitas like this, but in the Instant Pot the simmering time is reduced to just half an hour. Ree told her Twitter followers that she'd be sharing more Instant Pot recipes in the near future, too.
