30-Minute Meal: Spicy Peanut Soba Noodle Salad

Looking to spice up your Monday night? I’ve got just the recipe for you! Made with hearty buckwheat soba and crunchy veggies, this spicy peanut noodle dish is packed with flavor and has great texture. And the best part? It’s ready in under 30 minutes.

The real star of the show here is the spicy peanut sauce. You blend peanut butter, water, soy sauce, sesame oil, honey, lime juice, garlic, Sriracha, and peanuts together, adding the peanuts last so the sauce has a bit of a chunky consistency.

Then, while your soba noodles are boiling, you quickly cook some chicken breast in a skillet on the stovetop (or you can sub tofu if chicken isn’t your thing). Toss the cooked noodles and chicken with chopped red bell pepper, purple cabbage, and cilantro, and then stir in the sauce.

Garnish with some chopped peanuts for a little extra crunch and you’ve got the perfect meal to kick off the week!
