You Guys, Pickle Pizza Is Kind of a Big Dill Right Now

Arguing about whether or not pineapple belongs on pizza is so last year. 2019’s official pizza topping argument is about whether or not pickles belong afloat on a sea of cheese and boat of crust. According to the state of Minnesota, it seems the answer is a resounding yes. 

Before you start yucking the North Star State’s yum, have a look — because honestly, the pizza looks darn good. It starts with garlic-dill sauce in place of tomato sauce, then gets a layer of Canadian bacon, which they make in-house and smoke for two days. Then it gets the now-infamous layer of pickles, mozzarella cheese, and then a second layer of pickles for good measure. Before it goes in the oven, it gets a sprinkle of more dill.

The pizza topping blew up after being featured in a video that went viral. It comes from QC Pizza in Mahtomedi, Minnesota, but a quick glance at Instagram shows that they’re not the only ones with this flash of brilliance in the oven. Last year, I might have looked sideways at the concept, but in writing my cookbook last year, I had a chef add a layer of pickles to the Dungeness crab mac ‘n’ cheese, and frankly, it’s a total level-up for cheese-based foods.

The pizza is almost like an open-faced, dill-flecked version of a Cuban sandwich, in fact: you’ve got bread, ham, pickles, and cheese. Apparently, the idea didn’t come from there, though: it stemmed from something called “Minnesota sushi,” which is a snack food made by slathering a pickle spear in cream cheese and wrapping it into a piece of ham, and slicing it into a bite-sized snack. I’m still unwilling to yuck anyone else’s yum — especially not before I’ve given it a try. But I’m definitely digging into the pickle pizza before I get to the Minnesota sushi.
