Salted Honey No-Bake Peanut Butter Pie Is the Dessert You’ve Been Waiting For

I’m about to email all my coworkers and propose an office baking competition, just so I can win it with this salted honey no-bake peanut butter pie. Can you enter a no-bake pie in a baking competition? I have no idea, but I’m positive I could win the popular vote with fluffy, candy-bar-esque clouds of peanut butter on a crust of crushed Oreo cookies. 

Making a crushed-cookie crust is a lot easier than one might think. You’ll need about two cups of crushed Oreos or other chocolate cookies. Get the big box, because anything you don’t crush you can eat. Mix the crushed cookies with melted butter and toss everything together in a mixing bowl. The goal is for the butter to slightly moisten the cookies, but they should still be pretty crisp. Put all the cookies into your pie pan and press it into a pie crust. The author suggests using the bottom of a glass or a measuring cup to make sure the base of the pie is completely flat. 

To make the filling, combine softened cream cheese with peanut butter. A stand mixer with a paddle attachment will make that easier. Once it’s smooth and fully combined, add confectioners’ sugar, vanilla extract or vanilla bean paste, and heavy cream. 

To make the filling light and fluffy, whisk heavy cream briskly until it becomes whipped cream. Once the cream forms soft peaks, fold it gently into the peanut butter mixture. Pour all that into the crust, smooth the top, and refrigerate it while you finish the rest of the recipe. 

A salted honey whipped cream topping makes this pie taste like a honey-roasted peanut cheesecake. To make it, whisk heavy cream with honey and salt with a mixer until soft peaks form. Spoon it on top of the pie and refrigerate it for at least 30 minutes to let the whole thing set. Top the pie with a bit of shaved chocolate, and you’ll have a dessert that will blow everyones minds.
