You may have thought there was no way to improve on a good old-fashioned peach cobbler, but this wildly rich, creamy recipe from Grandbaby Cakes has done it. The two-in-one fusion dessert combines the classic flavors and texture of a New York-style cheesecake with the spices, peaches, and buttery crunch of a Southern peach cobbler. It’s like getting to eat two desserts at once, in every bite. 

“This cheesecake combines every single thing you adore about peach cobbler into a creamy cheesecake. Each bite has multiple layers of warm spices, textures, sweetness and delicious peach flavor,” writes Jocelyn Delk Adams from Grandbaby Cakes.

This recipe calls for a lot of steps to make each element sing. Stewing the peaches in sugar, butter, and spices lets them develop a rich, caramelized flavor with warm nutmeg and cinnamon. The crust is made of crushed shortbread instead of graham crackers, so it’s buttery and flaky. The shortbread also becomes a crisp, crumbly topping over the peaches. 

The peach cobbler cheesecake comes together in layers, so you have a layer of creamy cheesecake on top of the shortbread crust, then a layer of the peach filling, and another of cheesecake. After baking, the rest of the peaches top the cheesecake, along with the shortbread crumbles and whipped cream for a garnish. All that layering takes a bit of work, but it guarantees that you get a perfect bite with all the elements together on each forkful. 

This is definitely a project recipe. It’s not fast, and you probably can’t finish it without making a mess of your kitchen, but oh, it will be so worth it.
