A classic ragù is single serving comfort food at its finest. It's a wonderfully easy meal to throw together, cooks in one-pan, and many of the ingredients are pantry staples.

You may think of ragù as a cooking project; I think of ragù as single-serve comfort food at its best. In fact, I like to think of it as DIY Hamburger Helper. It’s wonderfully easy to throw together, many of the ingredients are pantry staples you may have stocked up on, and everything cooks in one pan for easy cleanup.

You’ll begin by cooking carrots and onions until they soften. At this point, consider adding a handful of spinach, sliced mushrooms, or frozen peas — really, whatever vegetables you’ve got on hand. Then, add a bit of garlic along with the pork, salt, and black pepper and cook until the pork is browned. No pork? You can use ground beef, chicken or turkey in its place.

Finally, add a can of diced tomatoes and allow the ragù to simmer. Bonus: It will fill your kitchen with the most incredible aroma. Unlike more traditional ragù recipes that call for low and slow simmering on the stove, this one cooks up in about 30 minutes. The only thing left is to stir in cooked pasta, top with Parmesan cheese, and enjoy!

Ingredients

  • 1 1/2 teaspoons

    olive oil

  • 1/4 cup

    peeled and chopped yellow onion

  • 1

    small carrot, peeled and finely chopped

  • 1 clove

    garlic, peeled and minced

  • 4 ounces

    ground pork

  • 1/4 teaspoon

    kosher salt

  • 1/8 teaspoon

    freshly ground black pepper

  • 1/4 teaspoon

    dried oregano

  • 1 (14-ounce) can

    diced tomatoes, including juice

  • 2 ounces

    elbow macaroni, cooked according to package instructions

  • 1 1/2 teaspoons

    shredded Parmesan cheese

Instructions

  1. In a 10-inch skillet over medium-high heat, heat oil 30 seconds. Add onions and carrots and cook, stirring occasionally, 4 minutes until carrots soften.

  2. Add garlic, pork, salt, pepper, and oregano to skillet and cook, stirring frequently, 4 minutes until pork is browned.

  3. Add diced tomatoes and bring to a boil over high heat, then reduce heat to low and simmer 15 minutes, stirring occasionally.

  4. Add cooked pasta and stir to coat. Top with Parmesan cheese. Enjoy hot.
