Tomorrow is a very special day, and not just because it’s the weekend. Since it was announced in November, we’ve been waiting eagerly for the royal wedding of Prince Harry and Meghan Markle, and tomorrow (May 19) it’s happening at last.

There has been so much speculation around the food that will be served for the happy occasion, but we know for sure that they’re going with a lemon and elderflower cake from Claire Ptak. The cake flavors are a departure from the more traditional fruit cake like Prince William and Kate Middleton had at their wedding.

If you’re planning on waking up very early tomorrow, honor the trend-forward couple by making these lemon ricotta pancakes from Cooking Classy. You have to eat breakfast anyway, right? And these lemon pancakes are a small nod to the happy couple’s cake. You could also make it a boozy brunch situation and pop some bubbles and add a touch of elderflower liqueur if you’re feeling extra fancy at 6 a.m.

Cooking Classy addresses anyones fears of adding cheese to pancakes by noting the ricotta is really just there for added moisture. “You don’t taste the ricotta here, it just adds so much moisture, it makes these seem like really buttery pancakes,” he notes.
