Not only is this the most popular Paleo recipe on Pinterest (with 259,000 saves this past year), but it's also the most popular Whole30 recipe on the platform.
This recipe is basically the queen of wellness trends.
"Salads tend to get boring quickly, especially when you are trying to stay on a healthy regime. With this recipe, I wanted to make something that had big and bold flavors, and that was tasty enough to enjoy eating healthy weather meal prepping or cooking for the whole family," Michelle of North South Blonde says of her inspiration behind this viral recipe.
At first glance the recipe looks a little basic, but Michelle uses a ton of spices to amp things up. The base of the meal is fresh salad of cucumber, avocado, tomato, romaine, red onion, and cilantro. The meal gets a ton of flavor from the blackened chicken, which calls for paprika, garlic powder, chili powder, and cumin.
"I believe that everyone is looking for recipes with simple ingredients that can be found in their pantries," Michelle says, on why she thinks the recipe went viral. "This recipe is quick and easy enough for anyone to make."
