Ice cream sandwiches are decadent to begin with. I mean, it's ice cream sandwiched between two cookies — not exactly a light treat. So while you're at it, you might as well make things a little more luxurious, right? Maybe by dipping said ice cream sandwich in melted chocolate not once, but three times? Yes, absolutely.
The trick to making perfect ice cream sandwiches is cutting directly into the cardboard pint of ice cream. You cut a disk of ice cream from the top of the pint, peel away the cardboard, and place the disk on top of the underside of a large chocolate chip cookie. Top with another large chocolate chip cookie, and you have a beautifully formed ice cream sandwich — no muss, no fuss.
But don't stop there! Dip half of the ice cream sandwich in melted chocolate, and freeze them for 15 minutes to let the chocolate set. Repeat this step two more times, until you've reached ultimate chocolate-dipped ice cream sandwich nirvana.
