Are you considering buying an Always Pan? If you’ve been reading about how much Kitchn staffers who own the pan love it, then that’s an easy “yes” for sure. But here’s where the real tough decision comes in: What color should you pick? The pan is available in seven beautiful glazes (although Lavender is sold out for now), and each one has a sweet back story that makes it just that much more special. For instance, Sage Green pays homage to founder Shiza Shahid’s mom who loves that color, Heat was launched to celebrate Lunar New Year, Blue Salt was inspired by Shahid’s own blue kitchen, and Lavender was chosen by the brand’s Instagram followers. But there’s one specific color that’s simply irresistible to shoppers and has racked up a 50,000-person waitlist. Drumroll please … make some noise for Spice! It’s finally back in stock after months and ready to ship out STAT.

A beautiful hue in the sweet spot between dusty pink and soothing terracotta, Spice is one of the brand’s O.G. colors. It was the star of their earliest marketing campaigns and at least partly responsible for making the pan such an iconic must-have. Kitchn contributor Patty, who first tested the Always Pan in Spice for us, called the mauve-pink color “fun,” and Shahid agrees that it’s one of her favorite glazes, too. And while it’s not a typical pink, “It’s a very unique color,” she says. Unique enough to rack up the longest waitlist in the history of the cookware brand!

As someone who owns the pan in Spice as well, I totally get what the hype is all about. The color is neutral enough to match just about any kitchen but still packs in some major style. And like all Always Pans, it has a slick nonstick finish for easy cooking, a three-inch depth that makes it perfect for whipping up small batches of soup or curry, and a steam basket that transforms it into a steamer. And if you’re considering snagging the brand’s hand-painted, porcelain dinnerware, then you can match the pieces to your pan to create a cohesive Spice collection.

So if you’ve been eyeing Spice but haven’t been able to get it, snag yours ASAP! Because no one wants to be at the end of a 50,000-person waiting list.
