This week we’re sharing our favorite recipes from five classic cookbooks. We started with The Moosewood Cookbook, and today we look at favorites from another kitchen stalwart: The Zuni Cafe Cookbook.

You may remember the best hidden tip from this cookbook, but what about the recipes? Here are the ones we just can’t get over, and never will.

1. Roast Chicken

The Zuni Cafe roast chicken is the ultimate. I did a version of it for The Kitchn. – Michelle

While I enjoyed having Rodgers’ roast chicken with bread salad recipe on hand (this was before the Internet made it readily available), I really didn’t get a chance to explore its depths until I started having dinner parties. And then it became worth its weight in gold (well, perhaps “its weight in duck fat” would be a better comparison). – Dana, as written here.

2. Fried Eggs in Bread Crumbs
