There are so, so many great recipes in Bittman’s cooking bible, it’s almost impossible to choose just a few. It’s one of the most comprehensive cookbooks out there, touching on almost anything you could ever want to know (hence the title). Every cook should have a copy. 1. Crab cakes

Bittman’s crab cake recipe is great. Just solid and reliably flavorful, with an emphasis on crab and less on the bread crumbs. We came back from Seattle for the first time with Dungeness crab in a box and it was our go-to. – Carrie
