One-Skillet Chicken with Fiesta Cream Sauce Is a Party in a Pan

What’s your favorite weeknight chicken recipe to cook? Is it because it’s literally the only chicken recipe you have up your sleeve? Because your family always asks for it? Because you can make it in 30 minutes while blindfolded? Are you a one-hit wonder?
To get you out of your chicken rut, we’re here to suggest a new weeknight chicken recipe. This one checks off all the boxes: It takes just 30 minutes to make in a single skillet, your family will love it, and if you make it enough, you can probably figure out how to do it blindfolded (eventually). Oh, and it also has the word “fiesta” in it, so there’s that.
So what about this chicken makes it a “fiesta?” The secret’s in the sauce! It’s loaded with cilantro, lime, cumin, garlic, red pepper flakes, and minced jalapeños. The recipe author wanted to recreate a zippier version of her super-popular chicken with lemon garlic cream sauce, and it looks like she’s succeeded.
Start by pounding chicken breasts (or thighs) into an even thickness and season with salt and pepper. Combine chicken broth, lime juice, garlic, cumin, and red pepper flakes and set aside to bring out the flavors. Using an oven-safe skillet, brown the chicken on both sides and remove from the pan to make the sauce. (The chicken will finish cooking in the oven.)
In the same skillet, cook diced onions with the chicken broth mixture and scrape up the flavorful bits from the bottom of the pan. Reduce the sauce until it’s the right thickness and stir in the jalapeños, butter, and heavy cream. At this point, remove it from the heat and add the chicken back into the pan. Place the skillet into the oven and cook until the chicken is completely cooked through.
