This One-Pot Parmesan Chicken & Rice Is Calling Your Name
Sometimes a recipe seems too good to be true. Take this one, for example: It cooks in one pot, in under 30 minutes, with only a handful of ingredients. It can’t be that good, right? Wrong. This creamy chicken and rice is comforting and delicious — and it really is as easy to make as it seems.
The whole really is greater than the sum of its parts here. You start with basic ingredients — chicken breast, long-grain rice, chicken broth, heavy cream — and you end up with a flavorful, rich final dish.
Cutting the chicken breast into cubes is the first step towards success. You sauté the cubed chicken with some Italian seasoning in a large skillet. Then you add the rice and chicken broth and simmer for about 20 minutes. Once the rice is cooked, you stir in some heavy cream and Parmesan cheese and garnish with fresh parsley, and that’s dinner!
You really can’t go wrong with creamy chicken and rice, but if you want to round out the meal with something bright and fresh, a simple arugula salad on the side will pair beautifully with this meal.
