Make & Freeze This One-Pot Chicken Soup with White Beans and Kale for Sick Days

Cold season is upon us, and I’m already feeling its angry wrath. Cough medicine is great, a nice book will make the time go faster, but what I’m really craving is a good soup. And just looking at photos of this easy chicken soup from Minimalist Baker makes my cold feel better. The golden broth looks so hot and comforting, almost like it’s saying, “I will make you feel better.” And that dark green kale looks so healthful, like it’s saying, “I will actually help you get better.” It’s full of big chunks of pulled, not sliced, chicken, and white beans so I know I can eat it and then not be hungry again 15 minutes later.

I would very much like someone to make this soup for me, and if I were I better planner, I would have made it before I got sick and put it in the freezer so it’s there, just waiting to be the cure to my cold. But even though there’s nobody around to cook it right now and I didn’t make it ahead and freeze it, I could definitely cook it myself without having to be off the sofa for very long. 

It only requires one pot and eight ingredients, and it cooks in just half an hour. If you’re thinking about making this soup, make it a double. Your future sick self will thank you.
