Quick, easy, delicious dinners: We all want them, we all need them. There are so many recipes online that promise to deliver on all three of these things, and fail to actually do so. Let me convince you why this one-pot creamy chicken lemon pasta from Spoonful of Flavor will not fail you. Go ahead and pick up the short list of ingredients for this recipe at the grocery store tonight.

It’s quick and easy: This is a true one-pot recipe. You don’t need to boil the pasta beforehand, and you don’t need a separate pan to sear the chicken in before cooking. You just need one pan, so that means faster cleanup. The whole recipe takes about 40 minutes to make (22 of which are inactive) and it requires simple ingredients, many of which you probably already have in your kitchen. The only semi-fussy thing, I think, is the shredded part-skim mozzarella cheese. If you can’t find it, just use whole milk shredded mozzarella.

It’s going to be delicious: This recipe has three different kinds of cheeses (cream cheese, mozzarella, and Parmesan) and it uses both lemon juice and zest. I love recipes that are super creamy, but don’t feel heavy, and with the added lemon I think this recipe will be just that. Lemon in pasta is my absolute favorite. The recipe also calls for three heaping cups of baby greens, but I think you could use even more to make it a little more filling and nutritious.
