This Chicken & Tortellini Skillet Is What’s for Dinner Tonight

If you’re a meal planner, you definitely already have tonight’s dinner mapped out. But I’m sorry to tell you that you’re gonna have to cancel it. Why? Because you’re making this one-pan chicken tortellini instead. Trust me — you will not regret it.

I mean, seriously, how could you look at that photo and not want to make this dream meal a reality tonight? And after you read through the recipe you’ll be even more excited. With only seven ingredients — chicken, tortellini, garlic, spinach, sun-dried tomatoes, chicken broth, and cream — this skillet meal manages to be both rich and flavorful. It’s one of those the-whole-is-more-than-the-sum-of-its-parts kinda meals.

If you have a favorite store-bought tortellini, this is the perfect place to use it. First you have to boil the tortellini according to the instructions on the package. Once the tortellini is cooked, you can set it aside. Then, in a large skillet, you cook the chicken — you can use boneless, skinless thighs or breasts here — over medium heat until it’s golden-brown. Once the chicken is cooked through, you can set it aside. In the same skillet where you cooked the chicken, you sauté the spinach, garlic, and sun-dried tomatoes for a few minutes. Pour in the chicken broth and then the cream, allowing the liquid to reduce a bit before adding the chicken back in, along with the tortellini. Taste and season with salt and pepper, and then dinner is ready.

Besides having to boil the tortellini in a separate pot first, this is essentially a one-pan meal, which means you can bring the whole pan to the table and let everyone dig in. And the best part? Cleanup will be a breeze!
