One-Pan Pizza Chicken Is the Easy, Fun Dinner Your Monday Deserves

The weekend’s over, so that means all the fun is over too, right? Not quite. Jazz up your standard chicken dinner with some tomato sauce, mozzarella cheese, and mini pepperoni and you’ve got this one-pan pizza chicken.

To get a nice golden-brown crust on the chicken, you sear each side for about four to five minutes in the skillet and then set it aside. In the same skillet where you cooked the chicken you sauté garlic and then add crushed tomatoes, basil, oregano, parsley, and red pepper flakes. Once the sauce has been simmering, you add the chicken back in, top it with the mozzarella and pepperoni, and then put the whole skillet under the broiler to melt the cheese.

Bring the skillet to the table and serve right out of it! A nice green salad on the side would round out the meal, but it would also be fun to serve some rolls (pretend they’re pizza crusts!) to sop up any extra sauce in the pan.

While nothing can actually replace a slice of pizza, if you have kids (or you’re just a kid at heart), this really is a fun way to dress up an otherwise boring dinner.
