On nights I want to guarantee both cooking and cleanup are a total breeze, I lean on recipes that come together with a single pot, pan, or skillet. One-pan is basically kitchen code for "easy" — something you can totally appreciate when you're following a Paleo diet. Since the diet makes eating out and ordering in kind of tricky (although not impossible), it requires a lot of cooking. So why not keep delicious grain- and dairy-free dinners as simple as possible, with one of these 15 recipes that come together in a single pot, pan, or skillet?

1. Salsa-Simmered Fish

Salsa is used as both a super-flavorful poaching liquid and sauce for flaky cod fillets in a skillet supper that comes together in minutes. Bulk it up with a side of cauliflower rice or a simple green salad.

2. Egg Roll Skillet

This easy ground pork skillet is inspired by the filling in Chinese egg rolls and requires very little chopping, thanks to a bag of coleslaw mix.

3. Fried Cauliflower Rice

To keep dinner quick and convenient I always start this meal with a bag of store-bought cauliflower rice (fresh or frozen will work). This recipe calls for a classic trio of carrots, corn, and peas, but any bite-sized frozen veggies will work. Swap the soy sauce for coconut aminos to keep it Paleo-friendly.

4. Sheet Pan Chicken with Red Potatoes and Sage

Consider chicken sheet pan suppers your simple dinner BFF. Use this recipe as your template: Since white potatoes are a no-no, swap them for any one of your favorite veggies (broccoli, cauliflower, and Brussels sprouts work well, and sweet potatoes and winter squash are occasional additions).

This saucy skillet dinner is just the right balance of sweet, spicy, and tangy. I often make this with a jar of traditional tomato salsa, but any type of salsa will work with the recipe.

With the help of the broiler, this sheet pan supper comes together seriously fast. Stay Paleo-compliant by swapping the white potatoes for carrot spears, bell peppers, or cauliflower.

This recipe shows you how to make steak an easy, weeknight-friendly dinner option. Butter is a hot topic of debate in the Paleo community, so when it comes to the herb butter that's used to finish the steak, be sure to use a grass-fed option — otherwise, swap it for ghee.

The best thing about this savory breakfast-for-dinner skillet is that the hash can be made in advance, so all that's left to do at the end of the day is crack the eggs on top and bake. Any type of sausage will work with this recipe — just be sure it's sugar-free if you're keeping things Paleo or watching your sugar intake.

Of all versions of fried cauliflower rice I've cooked, this one is my absolute favorite, hands-down. It's super satisfying and packed with tons savory flavors. While the recipe calls for pork, you can really make this with any leftover meat you have hanging out in the fridge.

10. Saucy Skillet Salmon

This bright, saucy skillet meal will show you just how easy it can be to make a fancy salmon dinner any night of the week. I love bulking this up by stirring a few big handful of spinach of other greens into the sauce at the end of cooking or serving it over a bed of cauliflower rice.
