One-Pan Sausage, Chickpeas, and Veggies Is a Meal Prep Miracle

I’m a total meal prep wannabe who needs all the help I can get. Ideally, I’d like to start with baby steps and work my way up to full on Power Hour mode, the likes of which many of my fellow Kitchn staffers have already been able to achieve. Seriously, a week of breakfast, lunch, and dinner in two hours or under? (One day, Lauren, one day.)

This healthy sausage, chickpea, and veggie sheet pan recipe seems like a good place to find my footing with this whole meal prep thing. Having only one pan to clean and lunch for a big chunk of the week is not a bad incentive either. Deep breaths … LET’S DO THIS!

You will need a sweet potato, red pepper, yellow onion, olive oil, a can of chickpeas, a head of broccoli, turkey sausage, cilantro, and assorted seasonings on deck. Here’s a kind-of-obvious-but-still-ingenious tip: Instead of chopping and prepping all of your ingredients first, stagger it. Since the veggies in this dish require different lengths of roasting, you can use the 20 minutes of idle time while the first batch roasts to make rice and prep the broccoli and sausage.

In total, all you need is 40 minutes to have a healthy, hearty, balanced week filled with protein and veggies for lunch — and very minimal dish-washing to boot.
