The best dinners come together quickly and easily, with minimal fuss. Take this garlic-herb chicken and asparagus, for instance — it cooks up in 20 minutes in a single skillet, leaving you with just enough time to quickly microwave some brown rice or make some quinoa on the stovetop.
Right now — spring! — is the best time to buy asparagus. Grab some at your local farmers market or grocery store and let it shine in this simple preparation. If you can’t get your hands on asparagus, though, I bet some green beans or Broccolini would be a delicious stand-in.
This recipe gives you the choice of using chicken thighs or boneless, skinless chicken breasts — choose what you like best! If you go the chicken breast route, though, you’ll have to pound them to an even 1/2-inch thickness.
When you’re ready to cook, all you have to do is melt some butter in a large skillet, add in minced garlic and dried herbs (basil, oregano, thyme, onion powder), and then sear your chicken on both sides in that warm garlic butter. Move your chicken over to one side of the pan when it’s almost done cooking, melt a little more butter, and then add in the asparagus.
And that’s it! Now you have a protein- and veggie-heavy dinner on the table, with only one pan to wash before bed. Pretty dreamy, right?
