This One Simple Ingredient Will Make Your Soup the Creamiest It’s Ever Been

Rich, creamy soups really hit the spot during the winter months. They have always been my go-to type of soup, but when I went vegan I realized that I couldn’t just pick up my favorite cream of potato soup from the grocery store. So I was thrilled to find a recipe on Instagram that makes it possible to have creamy soup without traditional dairy cream — and according to Kristi of @avocado_skillet, it only takes one simple switch.

Taking to her Instagram account to share her recipe for a creamy sweet potato red pepper soup, Kristi says that the one thing that will make your soups creamy without using cream is nut butter. While she’s a fan of adding almond butter to her soups, any type could work for you.

To make her sweet potato soup yourself, gather cubed sweet potatoes, a bell pepper, a quartered sweet yellow onion, a bulb of garlic, vegetable broth, almond butter, dried thyme, dried rosemary, nutritional yeast, salt, turmeric, paprika, harissa paste, black pepper, and juice from half a lemon. 

Preheat your oven to 400°F and while it’s warming, place the cubed sweet potatoes, garlic, red bell pepper, and onion on a parchment paper-lined sheet pan. Roast for about 45 minutes until everything is browned. After removing the garlic cloves from the bulb, add them — along with the other ingredients — to a blender, blending until smooth and creamy. Pour into a bowl and serve with bread, or just eat it as is.
