Not Just For Kids: An Ode to the Skillet Cookie

I associate giant cookies with childhood birthday parties. You know the ones: the giant pizza-shaped cookies that you would find at a grocery store where "Happy Birthday" or "Congratulations" was spelled out in deliciously stale frosting. There is something so wonderful about these treats (it's a cookie! But also a birthday cake!) that should be continued in adulthood.

What I particularly love about this recipes is that it's not fancy –– there's no nutella, bacon thing going on. It's just a giant chocolate chip cookie made in a cast iron skillet with a couple scoops of ice cream. The edges get crispy and the middle is always super gooey. Sounds like the perfect Wednesday treat to me!
