Despite my best intentions and my love of meal planning, I do occasionally fall off the meal planning wagon. Even though I share my weekly meal plan here, sometimes things don't go according to plan and we end up eating a lot of takeout and groceries are left uneaten.

This week I'm really and truly getting myself back on track, which is especially timely because Kitchn just kicked off a month-long series on the subject called Meal Plan Club. I'm using my favorite meal planning template to simplify things and ensure I can easily get back to basic meal planning.

Planning my weekly meals is a habit I enjoy. Since I'm frequently asked by friends and family what I'm cooking for dinner each week, I thought it'd be useful to share my weekly meal plan here. Whether you're just learning to meal plan and looking for a real-life example of how this works or you're an old pro on the hunt for inspiration, here's a peek at how I'm feeding my family this week.

Monday: Lemony Broccoli Pasta

Whenever I fall off the meal planning wagon, I start back with well-loved basics. Pasta partnered with broccoli, peas, and lemon is just that with bonus points for being full of ingredients I always have on hand. Plus, my kids especially love this recipe.

Tuesday: Huevos Rancheros Tacos

Taco Tuesday keeps my templated meal plan going. These black bean and scrambled egg tacos include a shortcut salsa and come together quickly for a night when we'll be getting home late.

Wednesday: Fluffy Vegan Pancakes

These pancakes are the request of my 6-year-old, who taste tested them with me a few months ago. We'll have oven-roasted bacon and fresh fruit alongside these breakfast-for-dinner cuties.

Thursday: Slow Cooker Golden Chickpea Soup

When I use a meal planning template for choosing my menu, I often leave Thursdays free for using up leftovers. However, this soup inspired by golden milk has been on my to-cook list. It's just the recipe to restart my love of meal planning again.

Friday: Zucchini Pesto Pizza Rolls

Another new-to-us recipe fills out our pizza Friday. I'm hoping this pesto and zucchini riff on pizza rolls will be a new family favorite so that we have another option for pizza Fridays.
