This method for cooking chicken in the oven is one of my favorites — the words “dry” or “boring” will never enter the conversation. Watch this video and see how it’s done.
In technical terms, this method is called “dry-poaching,” but don’t let that culinary oxymoron intimidate you — it just means you tuck a piece of parchment over the chicken before putting it in the oven and then letting the chicken breasts baste in their own juices. It’s a sure win for cooking juicy, flavorful chicken, and also a good technique for cooking several chicken breasts at once.
