What Does Healthy Mean to You?

Healthy to me is a mix of vegetables with good carbs and lean proteins. It's something that doesn't take too long to make, looks pretty, and is good left over.

1. Vegan Succotash from Mango & Tomato

If you are a gardener and have ginormous summer squash, I have a great dish for you: vegan succotash! I decided to cube the summer squash and turn it into a vegan succotash with a few other summer vegetables. Cured olives add a bit of interest and a great amount of saltiness. This can be breakfast, lunch, or dinner, or a great base for frittata or an omelet.

2. Coconut Carrot Soup with Za'atar Hazelnuts from Snacking in the Kitchen

This Whole30-approved recipe comes from my twin sister, Anna. You will not be able to resist the beautiful orange color and the za'atar hazelnuts. Fall can't get here soon enough.

3. Delicata Squash Boats wth Spicy Chicken Balls and Mozzarella from Mango & Tomato

Ground chicken is a great alternative to fattier ground beef when it comes to making meatballs. This recipe also contributes greatly to that five-vegetables-a-day requirement by using delicata squash and tomatoes! If you have kids in your household, they'll love the idea of vegetable boats with meatballs inside. A bit of cheese makes this dish slightly decadent.

4. Hummus with Ground Lamb, Feta, and Pistachios from Mango & Tomato

Comfort food doesn't have to involve low-and-slow cooking, or be fattening, braised, or warm. It can be something that takes you less than 15 minutes to make, still has a lot of color and texture, and doesn't leave you wanting to unbutton your jeans.
