What Does Healthy Mean to You?
I feel healthy when eating foods that make me feel like I had a few extra hours of sleep, give me a little lift in my step, and make me feel nourished from the inside out. It’s eating mindfully and intentionally — in rhythm with the seasons. I stay away from processed foods and always focus on whole ingredients because that’s when I feel my best. I follow a vegan diet and love this way of eating; I adore all kinds of vegetables, and love playing around with spices, herbs, and global cuisines, which I think all lend themselves beautifully to plant-based food.
What Are Your Favorite “Healthy” Recipes?
1. Spinach and Chickpeas from Smitten Kitchen
The ingredients in this recipe could not be simpler (or healthier!), but the flavors are deep, comforting, and nourishing. I could easily live off this dish most nights of the week.
2. Vegan Peanut Butter Cup Pie from Minimalist Baker
Being healthy means occasionally making room for treats, and this peanut butter cup pie is the (healthy-ish) answer to all my sweet, salty, creamy cravings.
3. Japanese Broth with Soba Noodles from Amy Chaplin
This recipe is not only delicious, but also beautiful to look at! I crave it most in the colder months, but love the ability to swap out veggies to suit the season, which makes it a really versatile dish.
4. Asian Avocado Salsa from Epicurious
This is a great recipe because it’s a fabulous unexpected twist on salsa — the heat comes from the wasabi, which is balanced out by the cool, creamy avocado. I love serving this to guests and clients alike!
