When our kids were really little, one of our favorite travel hacks was to bring a little insulated bag for each of them. In the mornings that were a scramble just to get on the road, we could grab some simple eats like yogurt, a piece of fruit, and a baked good they could eat in the car en route to the day’s destination. As our kids have grown, they’ve developed tastes and preferences for a different kind of on-the-go breakfast — like these PB&J breakfast parfaits.

I’m not saying that Hampton by Hilton changed breakfast for them, but they’ve certainly been spoiled by the in-room mini-fridges (we can buy local produce like strawberries) and the legendary waffles on the breakfast menu (classic Vanilla Malt is their favorite). Thankfully, Hampton locations are plentiful, and they have a 100-percent happiness guarantee, so we’re never far from a perfect night of sleep and a kid-approved breakfast.

You can add those local berries if you've got them, or opt for a banana or jelly from the hotel breakfast options.

The original idea for these parfaits was born from my daughter’s delight in taking a basic yogurt cup and dressing it up with options from Hampton’s condiment selection — like the peanut butter and honey the hotel had provided for topping toast — and making a sort of dressed-up yogurt bowl. Then she fell in love with the waffle station! Hampton’s always-fresh waffle batter is plentiful, and the waffle machines are easy to use, so she wanted to combine her creations (those yogurt bowls) with the wonderful waffles.

We often travel with a few empty containers, so we can build them parfait-style. As an added bonus, we can easily throw these parfaits into an insulated cooler for eating later.

This version is inspired by that perennial kid-favorite, peanut butter and jelly. Honey and peanut butter are stirred into yogurt and then layered with fresh fruit and waffle pieces. You can add those local berries if you’ve got them, or opt for a banana or jelly from the hotel breakfast options. We often travel with a few empty containers, so we can build them parfait-style. As an added bonus, we can easily throw these parfaits into an insulated cooler for eating in the car — a tip that harkens back to traveling with our kids as toddlers.

PB&J Waffle Parfait

Ingredients

  • 2

    buttermilk waffles

  • 1 pint

    fresh strawberries or 2 bananas

  • 2 cups

    low-fat yogurt

  • 1/4 cup

    creamy peanut butter

  • 2 tablespoons

    honey

  1. Cut the two buttermilk waffles into bite-sized pieces. Stem and slice the strawberries or peel and slice the bananas.

  2. Combine 2 cups low fat yogurt, ¼ cup peanut butter, and 2 tablespoons honey in a small bowl and use a spoon to combine.

  3. Spoon about half of the yogurt mixture into 4 bowls or mason jars. Top the yogurt with half of the strawberry or banana slices, followed by half of waffle pieces. Add the remaining yogurt mixture to each of the bowls and repeating with the remaining fruit and waffle pieces.
