I’ve said it before, but it’s worth repeating: Make-ahead meals are one of the very best gifts you can give to your future self. Whether I get the ball rolling with some prep the night before or make a full recipe or two over the weekend, make-ahead meals are my best secret to getting a home-cooked dinner on the table during the week.

I like to reserve this chicken soup for Sundays, when it can do its thing in the slow cooker all day, and then I stash it in the fridge so Monday’s dinner only requires a quick reheat.
