Under normal circumstances, April is a month spent celebrating the arrival of spring produce, like

asparagus

all the lemon desserts. Cooking this April looked a bit different. Instead, we all tried to adapt and settle in to the new routine of cooking at home (and washing dishes!) all the time. For some that meant finding the
fastest, easiest dinners around; for others it meant really
leaning into family-friendly comfort foods, or
whipping up sweet treats (even if you didn’t have a speck of all-purpose flour).

From comforting carbs and creamy casseroles, to recipes that repurpose leftovers and use up every last bit of our sourdough starter, these are the 10 most popular recipes from this past month.

1. The Absolute Best Lentil Soup

This lentil soup is everything we need right now: It’s wholesome and hearty, wonderfully creamy without a drop of cream, and just as soothing as it is easy to pull off.

2. Homemade Taco Seasoning

Making your own taco seasoning is always tastier than anything you’ll buy because it gives you complete control over the flavor, so you can mix it up just the way you like. It is, of course, a natural partner to ground beef tacos, but it also gets a well-earned spot in soups, casseroles, and dips.

3. Flourless Lemon Almond Cake

Even if I could find all-purpose flour right now, I’d still choose this bright and sunny flourless cake (it uses almond flour instead). Serve it up with a light dusting of powdered sugar and fresh berries.

6. Overnight Sourdough Pancakes

Pancakes are our favorite way to make use of the discard from your sourdough starter. They’re just as easy as classic pancakes and reward you with a unique tang that’s brighter than buttermilk.

7. 15-Minute Pork Fried Rice

You’ll never regret turning leftover rice into a big skillet of fried rice, loaded with crumbles of ground pork, eggs, and whatever veggies you have in the freezer.

8. Crispy Air Fryer Baked Potatoes

Baked potatoes are the best thing you’re probably not making in your air fryer. It yields a potato with shatteringly crisp skin and the most tender, fluffy flesh.

9. Strawberry Cake Mix Brownies

A box of strawberry cake mix is the secret to this sweet treat that has the dense, chewy texture akin to chewy cocoa brownies and blondies, but with a fruity twist and blanket of cream cheese frosting.

10. Lemon Poppy Seed Muffins

If you’ve got a few cups of flour on hand, I can promise that you’ll never regret making a batch of these sweet-tart muffins. The contrast between the crackled sugar topping and the moist, tender muffin is simply unbeatable.
