There are a lot of things a person can do to take advantage of all the cucumbers in the stores and farmers markets right now. We could make cocktails, salads, pickles, and even cold cucumber soups. With their bright-green color, cucumbers lend themselves to a lot of visually appealing summer recipes, so there are a ton of good cucumber recipes on Pinterest.

I even found a tutorial for making cucumber roses. But of all the many cucumber recipes on Pinterest, the most popular one is this cucumber, onion, and tomato salad from a blog called Yummy Mommies. It's been saved more than 34,000 times, and several people have posted photos of their attempts at making it.

The cucumber, onions, and tomatoes are tossed in a mixture of water, distilled white vinegar, vegetable oil, sugar, salt, and pepper. It's a very simple recipe, and customizability appears to be a big part of what makes it so popular. Most of the commenters who made the salad said they changed the recipe by adding things like avocado, peppers, watermelon, or mozzarella, or changing the white vinegar to Champagne vinegar or apple cider vinegar.

The salad is meant to be made in advance, and it actually benefits from being made early and allowed to sit in its own juices for a while so the flavors can meld. The recipe calls for the salad to be allowed to rest in the refrigerator for at least two hours before serving, but the flavors get better the longer the salad sits, so you could make it the day before, or even a couple days ahead of time.
