Watch This Genius Minnesota Farmer Cut Corn Perfectly with a Cake Pan
According to Minnesota farmer Mark Nelson, there’s one truly magnificent way to cut corn, and it’s so, so easy, you can do it right at home in a matter of seconds and have freshly chopped corn for salads, tacos, pasta salad dishes, and more!
Here’s what you do: You take a piece of corn on the cob out from the cool bath it’s sitting in (where it’s been washed) and then you put the cob through the hole in an angel food cake pan. As you shove it through this section, you can watch the corn fly off the cob! And really — instantly! You can see the mastermind at work in this video.
Nelson has a hole in the plywood he’s working on with a large can underneath. The unwanted cobs go straight into the can to be discarded (or maybe turned into stock later on?). The corn kernels themselves go straight into the cake pan! So fast, so easy.
And from there, it’s a matter of what to do with the corn. You can use it in a creamy, rich corn casserole, in a tasty bucatini recipe with fresh burrata, or in a light salad that’s perfect for early fall, as it’s fresh and sweet with salty feta, basil, and ripe, juicy tomatoes. Experiment with a few different corn recipes while you can still enjoy corn al fresco in the beautiful warmth and sunshine. And of course, when it get chillier, a good old corn chowder soup and cornbread never hurt!
