This Mexican Cheesy Ground Beef and Rice Casserole Is Magic

Carrian Cheney, the blogger behind Oh Sweet Basil, admits that this recipe is a modification of her mother’s famous “Mom’s Busy Day Casserole,” and we can totally see why it’s called that. It’s quick, relatively painless to make, and calls for canned soup. The moral of the story is that everyone needs a Busy Day Casserole recipe up their sleeve. It’s a total life-saver.
Here’s how to make this one: Spray a baking dish with nonstick spray and preheat your oven to 350°F. While the oven heats up, brown ground beef in a large skillet, drain off the fat, and add in a taco seasoning packet. Then add in a can of fiesta nacho cheese soup, water, uncooked long-grain white rice, and a can of black beans, stirring to combine. Place in the greased baking dish and cook for an hour-and-a-half, topping with cheese at the very end. The rice will cook to perfection while the casserole bakes, and the end result is anything but soggy. I promise!
