This recipe turns the traditional beef bolognese on its head by subbing in dried chorizo instead. You cook the crumbled chorizo with chili flakes, garlic, red wine, chopped tomatoes, and a hint of brown sugar to make the sauce, then ladle it over a big bowl of cooked pasta.
