That’s why, as promised, this series is shifting — every week I’ll be answering reader requests and sharing meal plans that you want to see.

A Week of Mediterranean Diet Dinners
To kick things off, this week’s meal plan comes from a request in our Meal Plan Club Facebook Group.
The Mediterranean diet is more a set of general healthy eating guidelines than a diet in the traditional sense. The focus is on filling your plate with things like whole grains, vegetables, fruits, legumes, and healthy fats like olive oil, seafood, nuts, and avocado, and allows for a lesser amount of dairy, eggs, and lean protein like chicken.
Monday: Easy, Healthy Greek Salmon Salad
Salmon is a Mediterranean diet staple, and it’s an easy, wholesome way to turn Greek salad into an entrée. Start by making the vinaigrette so you can use a little to quickly marinate the salmon fillets, then save the rest for drizzling over the salad.
Tuesday: Spinach and Feta Frittata
Every week deserves a night when breakfast for dinner is on the roster. This veggie and herb egg dish will help you put the leftover feta cheese from Monday night’s dinner to work.
Not only is this seafood and bean skillet packed with ingredients that are part of the Mediterranean diet, but it’s also perfect for weeknights when you don’t have a lot of energy and want dinner fast. I recommend pairing it with cauliflower rice, zucchini noodles, or a pot of whole grains to soak up all that wonderful sauce.
Thursday: Sheet Pan Chicken Souvlaki
This chicken and veggie dinner is packed with herby, lemon flavors that will remind you of Greek-inspired souvlaki. To get the crispiest skin on the chicken thighs, remember to pop the sheet pan in the oven while it preheats.
This light and fresh one-pot meal puts a hearty mix of vegetables front and center and calls for slightly less pasta. This makes it a good choice if you’re following the Mediterranean diet, which suggests reserving pasta for the occasional meal.
