TikTok food trends may come and go, but Sarah Thomas-Drawbaugh (aka @healthyishfoods) has cracked the code on a classic with her viral recipe for grated egg toast. When grated, the hard-boiled egg takes on a fluffy-yet-rich texture that somehow manages to improve on what was already a great combination: avocado and eggs. In the original TikTok, the Colorado-based recipe developer uses sourdough bread, Kewpie mayonnaise, and Sriracha. I’ve adapted the recipe to make it kosher for Passover by using a sheet of matzo, softened Kosher for Passover butter, and crushed chile flakes.

Great for breakfast or a protein-packed snack, this dish should be served immediately after making so the matzo stays crispy. Using hard-boiled eggs that have been refrigerated overnight makes it easier to grate the eggs cleanly, and it means you can have breakfast ready in about five minutes. The possibilities for garnishes are nearly endless — sliced radishes, diced tomatoes, and tender green herbs like chives or parsley would all work well here.

I prefer the gluten-free Yehuda matzo for snacks like this, which means this dish has the added benefit of being completely gluten-free, but you can use any matzo you prefer.

Ingredients

  • 1 teaspoon

    unsalted butter

  • 1

    large hard-boiled egg

  • 1/2

    medium avocado

  • 1

    sheet matzo

  • 1/2

    medium lemon

  • 3/4 teaspoon

    kosher salt, divided

  • 1/4 teaspoon

    red pepper flakes

  1. Let 1 teaspoon unsalted butter sit at room temperature until softened.

  2. Peel 1 large hard-boiled egg. Peel 1/2 medium avocado and thinly slice lengthwise.

  3. Spread the butter evenly on 1 sheet matzo. Arrange the avocado slices evenly on the matzo. Squeeze the juice from 1/2 medium lemon over the avocado, then sprinkle with 1/2 teaspoon of the kosher salt.

  4. Grate the egg directly onto the avocado with a Microplane or on the smaller holes of a box grater. Season with remaining 1/4 teaspoon kosher salt and 1/4 teaspoon red pepper flakes.
