I consider myself lucky to have witnessed, during my lifetime, the complete 180 of Brussels sprouts' identity as a vegetable. It seems like in the blink of an eye, these mini cabbages went from being steamed, stinky, and kinda uncool to roasted, charred, and downright sexy. The world has finally stopped sleeping on Brussels sprouts and it's about time. They had nowhere else to go but up — plain and simple.
These spicy maple Dijon grilled Brussels sprouts from Ambitious Kitchen might be simple to make, but they're far from plain. In this recipe, the summery skewers forgo the roasted route in favor of the grill, which thankfully still lends the veggie a nice, caramelized char. (Both are cooking methods that really take Brussels sprouts to a different playing field.)
They're coated with a delicious glaze made with olive oil, maple syrup, Dijon mustard, garlic, cayenne, salt, and pepper and grilled until the leaves start to crinkle and the flavor seeps into every layer.
Monique from Ambitious Kitchen confesses that the hardest part about this recipe is threading the halved Brussels onto skewers. Once you accomplish that feat, place them on a hot grill for five to seven minutes per side or until they are the perfect amount of golden-brown. Take the same approach when grilling Brussels sprouts as you do when roasting a marshmallow and embrace the char. It'll feel more like summer that way.
