At the start of the new year I take inventory of my pantry. I check to see what I’m running low on and what staples I need to stock up on or, conversely, what I need to consume in large quantities before it expires. Lentils are always on one list or the other and this recipe makes great use of them. When paired with potatoes they’re not only hearty, but also satisfying. That’s why I’m so excited about this one-pot lentil soup from Cooking LSL. It’s something you can make once and eat all week long.

You can make this recipe on the stove or in the slow cooker for a hands-free cooking process; the choice is yours! This is a great pantry-clearing meal, as it uses the ends of vegetables, lentils, and potatoes you might have left over from other meals. In fact, there’s a good chance you already have everything you need on hand to make it tonight.

To whip this soup up at home you simply sauté the onions, carrot, and garlic and then add in tomato paste, lentils, and water. Toss in the potatoes and herbs and walk away. That’s it! We love simple recipes that are big in taste and packed full of things that are good for us. It’s a perfect meal to make in 30 minutes and an even better one to keep eating all week long. Meal prep = done!
